Unique Hand Rolls Avocado and Chicken with Salsa
- 350 grams Uncooked white rice
- 2 tbsp Sushi vinegar
- 1 fillet Chicken (thigh or breast)
- 1 dash Salt and pepper
- 1 tbsp Sweet chilli sauce
- 1 Avocado
- 1 tsp Lemon juice
- 1 Thin stripped cheese
- 1 Mayonnaise
- 1 Toasted nori seaweed
- 1 Tomato, finely minced
- 1/6 Finely chopped onions
- 1/2 tsp Salt
- 1 pinch Black pepper
- 1 tsp Ketchup
- 1 tsp Honey
- 2 tsp Olive oil
- Put the ingredients in a plastic bag, then rub in and let sit for 1 hour (or overnight) in the refrigerator.

- Cook the rice to use as sushi rice.
- Mix in the sushi vinegar to make sushi rice.
- Put the salsa ingredients in a bowl, then mix.
- Place chicken skin side down in a heated frying pan.
- Pan fry until crisp, turn it over, reduce heat to low, then cover and cook for about 5 minutes.
- Remove the lid, turn up the heat, pan fry both sides, then remove from the pan.
- When it cools, chop into bite-sized pieces.
- Slice the avocado into 1-cm sticks, then squeeze lemon juice over the top.
- Place the sushi rice, chicken, avocado, and drained salsa sauce on a piece of roasted nori seaweed, sprinkle with cheese or mayonnaise to taste, then roll it up.
- Try it with sauteed chicken seasoned with sweet chilli sauce.
