Bearnaise Sauce Recipe

  1. In the top of a double boiler, beat egg yolks and lemon.
  2. Cook slowly over low heat, never allowing water in bottom of the double boiler to come to a boil (just simmer).
  3. Slowly add in melted butter to egg yolks and lemon mix.
  4. Add in salt and pepper, capers, parsley, vinegar, whisk to blend.
  5. Makes 2 c..
