Blue Corn Dumplings Recipe
- 1 c. Blue cornmeal
- 2 tsp Baking pwdr
- 1 tsp Salt
- 1 tsp Solid vegetable shortening
- 1/3 x 1/2 c. lowfat milk
- Mix the blue cornmeal, baking pwdr and salt thoroughly in a bowl.
- Add in the shortening and work the ingredients together with a pastry cutter or possibly fork till the mix resembles coarse meal.
- Add in sufficient lowfat milk to make a batter of medium consistency, not too thick or possibly too thin.
- Drop batter by teaspoonfuls on top of stew or possibly chil in a pot.
- Cover the pot tightly and steam the dumplings for 15 min.

- The stew or possibly chile should be kept simmering over medium-low heat during this process.
- After 15 min, remove lid and serve the stew or possibly chili with the dumplings.
