Blue Corn Dumplings Recipe

  1. Mix the blue cornmeal, baking pwdr and salt thoroughly in a bowl.
  2. Add in the shortening and work the ingredients together with a pastry cutter or possibly fork till the mix resembles coarse meal.
  3. Add in sufficient lowfat milk to make a batter of medium consistency, not too thick or possibly too thin.
  4. Drop batter by teaspoonfuls on top of stew or possibly chil in a pot.
  5. Cover the pot tightly and steam the dumplings for 15 min.

  8. The stew or possibly chile should be kept simmering over medium-low heat during this process.
  9. After 15 min, remove lid and serve the stew or possibly chili with the dumplings.
