Junior League - Grilled Chicken and Mango Salsa
- 6 cups chopped ripe mangoes
- 1 cup finely chopped red onion
- 12 cup chopped cilantro
- 6 tablespoons lime juice
- 2 large cloves garlic, minced
- 4 jalapeno chiles, seeded and minced
- 12 teaspoon red pepper flakes
- salt
- 24 small boneless chicken breasts
- 34 cup olive oil
- 12 cup white wine vinegar
- 3 tablespoons ground ginger, root
- 3 tablespoons coriander
- 1 tablespoon cumin
- pepper
- cilantro
- Salsa: Mix all ingredients and chill.
- Chicken: Mix all ingredients and pour over chicken.
- Reserve 1/4 cup of marinade.
- Marinade for up to 2 days.
- Drain and grill chicken over medium heat.
- Pour salsa over chicken on serving plate.
- Garnish with cilantro.
