Glazed Coffee Cake Recipe
- 1/2 c. Grape Nuts
- 1 1/2 c. sugar
- 2 teaspoon instant coffee
- 2 teaspoon cinnamon
- 1 3/4 c. flour
- 1 teaspoon soda
- 1/2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1 c. (1/2 pt.) lowfat sour cream
- 1/2 c. butter
- 1/2 teaspoon vanilla
- 2 Large eggs
- Hint: Leave off soda, baking pwdr and salt if using self-rising flour and cake may be baked in bundt pan.
- Mix cereal, 1/2 c. sugar, coffee and cinnamon (set aside).
- Mix flour, 1 c. sugar, soda, baking pwdr and salt in large mixer bowl.
- Add in lowfat sour cream, Large eggs, butter and vanilla.
- Blend on low speed of mixer then 1 minute on medium.
- Spread 1/2 batter in greased 8 inch square pan.
- Sprinkle with half cereal mix, another third of batter, rest of cereal mix, then remainder of batter.
- Bake at 350 degrees 45 to 50 min.
- Glaze with:
grape nuts, sugar, instant coffee, cinnamon, flour, soda, baking pwdr, salt, sour cream, butter, vanilla, eggs
