Foil-Pack Chicken Fajita Dinner

  1. Heat oven to 400 degrees F.
  2. Fold up all sides of each of 4 large sheets of heavy-duty foil to form 1-inch rim; spray foil with cooking spray.
  3. Combine rice, water and seasoning mix; spoon onto centres of foil.
  4. Top with remaining ingredients.
  5. Bring up foil sides.
  6. Double-fold top and ends to seal each packet, leaving room for heat circulation inside.
  7. Place in 15x10x3/4-inch pan.
  8. Bake 30 to 35 min.
  9. or until chicken is done (170 degrees F).
  10. Let stand 5 min.
  11. Cut slits in foil to release steam before opening packets.
