robinmay's baked horseradish carrots
- 1 bag baby carrots
- 2 tbsp horseradish
- 2 tbsp grated onion
- 1 tsp salt
- 3/4 tsp pepper
- 1/2 tsp mayo
- 2 tbsp melted butter
- 1/4 cup bread crumbs
- 2 tbsp parmesan cheese
- boil carrots in water till tender
- drain carrots reserving 1/4 cup cooking liquid in a bowl
- add horseradish, onion, salt, pepper, mayo,and butter to the cooking liquid and mix
- toss carrots with mixture
- put carrots in a greased baking dish
- sprinkle with bread crumbs and parmesan cheese
- bake at 375 for 20 minutes
