African Squash And Yams (Futari) Recipe
- 1 sm Onion, minced
- 2 Tbsp. Oil
- 1 lb Hubbard squash, pared & cut into 1" pcs
- 2 med Yams pared, cut to 1" pcs
- 1 c. Coconut Lowfat milk
- 1/2 tsp Salt
- 1/2 tsp Grnd cinnamon
- 1/4 tsp Grnd cloves
- Cook and stir onion in oil in 10-inch skillet over medium heat till tender.
- Stir in remaining ingredients.
- Heat to boiling.
- Reduce heat.
- Cover and simmer 10 min.
- Simmer, uncovered, stirring occasionally, till vegetables are tender, about 5 min longer.
- Makes 6 to 8 servings
