The Cuke Cocktail

  1. In a food processor or blender blitz the cucumbers until a smooth puree.
  2. Over a bowl strain the liquid using a fine mesh strainer.
  3. Discard the pulp.
  4. In a pitcher filled with ice add the cucumber juice, vodka, lemon juice, salt and mint.
  5. Stir with a wooden spoon and serve in a martini glass.
  6. Garnish with peels.
