Peanut Noodle Salad

  1. Mix first 5 ingredients together in a large bowl until smooth.
  2. Salt and pepper to taste.
  3. Add carrot, green onions and frozen peas.
  4. Meanwhile, bring a large pot of water to boil with salt.
  5. Add noodles and cook until al dente.
  6. Reserve 1/2 cup of pasta water and drain pasta.
  7. Pour hot pasta over peanut butter mixture.
  8. Use 2-3 tablespoons of the reserved pasta water to loosen up the sauce.
  9. Let cool, cover and refrigerate.
