Southwest Sausage Frittata
- 9 Land O Lakes Eggs
- 1/3 cup milk or water
- 2 tablespoons Land O Lakes Butter
- 3/4 cup cooked crumbled breakfast sausage
- 1/2 cup black beans, rinsed, drained
- 2 tablespoons chopped green chiles
- 3/4 cup shredded hot pepper jack cheese
- Chopped fresh cilantro, if desired
- Refrigerated fresh salsa, if desired
- Combine eggs and milk in bowl; beat with whisk until well mixed.
- Melt butter in 8-inch nonstick skillet until sizzling; add egg mixture.
- Cook over medium heat, gently lifting and stirring slightly with spatula to allow uncooked portion to flow underneath, 1-2 minutes or until almost set.
- Sprinkle sausage, beans and green chiles over eggs.
- Cover; continue cooking 7-9 minutes or until set.
- Sprinkle with cheese.
- Cover; remove from heat.
- Let stand 1 minute or until cheese is melted.
- Sprinkle with chopped cilantro, if desired.
- Cut into 6 wedges.
- Serve each with salsa, if desired.
