Veggied Frittata
- 1/2 cups Milk
- 4 whole Eggs
- 3 whole Garlic Cloves, Peeled And Minced
- 1/2 whole Medium Onion, Chopped
- 1 Tablespoon Cumin
- 1/2 teaspoons Red Pepper
- 1/4 teaspoons Salt
- 1/4 teaspoons Pepper
- 1/2 cups Shredded Mozzarella, Divided
- 3/4 cups Mushrooms, Sliced
- 1- 1/2 cup Fresh Spinach
- 1 whole Medium Tomato, Sliced

- Heat oven to 350 degrees F. Spray 9-inch pie pan with cooking spray.

- In medium bowl, whisk together milk, eggs, garlic, onion, seasoning and 1/3 cup of cheese until blended (you can season more according to taste).

- Stir in the mushrooms and spinach, then pour into the pie plate.
- 4.
- Randomly place tomato slices all over mixture.
- Sprinkle the remaining cheese on top of the mixture.
- 5.
- Bake 30 to 35 minutes or until a knife inserted in the center comes out clean.
