Harry'S Salsa
- 3 (28 oz.) cans tomatoes (be sure to drain very well and chop)
- 2 large fresh tomatoes, finely chopped
- 2 scallions, finely chopped
- 1 small onion, finely chopped
- 1 (4 oz.) can mild green chillies, chopped to suit
- splash of dry red wine to suit
- splash of juice from jar of hot jalapeno peppers
- 3 or 4 hot jalapeno peppers, chopped to suit (chop fine for a milder flavor, larger for hotter flavor)
- pinch of sugar
- bit of cumin and oregano (a bit is larger than a pinch)
- juice of 1 fresh lime to taste
- 1 large clove fresh garlic, very finely chopped
- 1 Tbsp. fresh parsley, finely chopped
- Combine the ingredients in a large bowl and adjust consistency to suit yourself.
- If you like your salsa on the saucy side, put the chunky bits in the blender and start experimenting.
- Proceed with a light touch on the button.
- If you like it chunky, and it's a little thin (because you didn't drain the tomatoes enough), now is the time to add a small amount of tomato sauce to thicken it up.
- Be sure to experiment with this recipe until it suits your taste.
