Roasted Vegetable Hummus Wrap
- 2 cups Raw Or Frozen Vegetables (I Used Broccoli, Zucchini, Carrots, And Grape Tomatoes)
- 1 Tablespoon Extra Virgin Olive Oil
- 1 dash Salt And Pepper, to taste
- 1 dash Garlic Powder
- 2 whole Burrito-sized Tortilla Shells
- 4 Tablespoons Hummus
- 2 Tablespoons Feta Cheese

- Preheat oven to 425 degrees F. Chop all veggies to consistent sizes so they will cook evenly.
- Drizzle with extra virgin olive oil.
- Sprinkle with salt, pepper, and garlic powder.

- Roast at 425 degrees F for 20-25 minutes, turning vegetables every few minutes.

- When veggies are out, turn oven to broil.
- Add tortilla shells to the pan and broil on High for 1-2 minutes until warm.

- Spread hummus on tortilla.
- Add vegetables and feta cheese.
