Roasted Vegetable Hummus Wrap

  2. Preheat oven to 425 degrees F. Chop all veggies to consistent sizes so they will cook evenly.
  3. Drizzle with extra virgin olive oil.
  4. Sprinkle with salt, pepper, and garlic powder.

  6. Roast at 425 degrees F for 20-25 minutes, turning vegetables every few minutes.

  8. When veggies are out, turn oven to broil.
  9. Add tortilla shells to the pan and broil on High for 1-2 minutes until warm.

  11. Spread hummus on tortilla.
  12. Add vegetables and feta cheese.
