Beans And Rice Salad Recipe

  1. Combine first 3 ingredients.
  2. Cover and refrigerateat least 8 hrs.
  3. Cook rice omitting salt.
  4. Rinse with cool water; drain.
  5. Combine rice and 1/4 c. salad dressing, stirring well.
  6. Refrigerateat least 8 hrs.
  7. Spoon rice into individual lettuce lined plates.
  8. Spoon bean mix over rice.
  9. Top with cheese, green onions, tomatoes and if you like, lowfat sour cream.
