Beans And Rice Salad Recipe
- 1 can black beans
- 1/4 c. Italian salad dressing
- 1/4 teaspoon pepper
- 3/4 c. long grain, uncooked
- 1/4 c. Italian dressing
- Lettuce leaves
- 3/4 c. shredded Cheddar cheese
- 3 med. green onions
- 1 med. tomatoes, minced
- Lowfat sour cream, optional
- Combine first 3 ingredients.
- Cover and refrigerateat least 8 hrs.
- Cook rice omitting salt.
- Rinse with cool water; drain.
- Combine rice and 1/4 c. salad dressing, stirring well.
- Refrigerateat least 8 hrs.
- Spoon rice into individual lettuce lined plates.
- Spoon bean mix over rice.
- Top with cheese, green onions, tomatoes and if you like, lowfat sour cream.
