Apricot Compote

  1. Halve or quarter your apricots and remove the pits.
  2. Place them in a saucepan with the juice and sugar.
  3. Bring to a simmer over medium heat.
  4. Reduce the heat to low, cover, and cook, stirring occasionally, for 5 to 10 minutes, or until the apricots are tender.
  5. The longer you cook them, the more tender (mushy, even) they will get.
  6. Serve warm or cold.
