Quick Poached Ginger Chicken on Greens

  1. Place stock, ginger and soy sauce in a large saucepan which fits a steamer insert.
  2. Bring to a boil.
  3. Add chicken tenderloins.
  4. Bring back to the boil.
  5. Reduce to a simmer.
  6. Place steamer on top of chicken and add snow peas and sugar snap peas.
  7. Steam vegetables 5 minutes.
  8. Remove pot from heat.
  9. Remove steamer and stir through snow pea sprouts.
  10. Serve greens on rice, topped with chicken.
  11. Spoon stock over generously.
