AMIEs BAKED FISH
- 2 medium-sized bangus (milk fish)
- 3 big tomatoes, chopped
- 1/2 cup spring onions, chopped
- 1 tsp salt
- 1 tbsp calamansi or lime juice
- 1 olive or vegetable oil
- Clean fish.
- Slit at the back, remove intestines and gills.
- Set aside.
- Chop tomatoes and green onions.
- Put them in a bowl.
- Season with salt.
- Add calamansi juice and strain the mixture.
- Stuff the fish with onion-tomatoe mixture.
- Place fish in a well-greased shallow pan pan.
- Bake at 180AC, uncovered, until fish is cooked.
- Bake the fish for 40 minutes.
- Put in a platter, garnish with tomatoe slices and spring onions.
- Serve with mayonaise or other desired sauce.
- Serve warm.
