AMIEs BAKED FISH

  1. Clean fish.
  2. Slit at the back, remove intestines and gills.
  3. Set aside.
  4. Chop tomatoes and green onions.
  5. Put them in a bowl.
  6. Season with salt.
  7. Add calamansi juice and strain the mixture.
  8. Stuff the fish with onion-tomatoe mixture.
  9. Place fish in a well-greased shallow pan pan.
  10. Bake at 180AC, uncovered, until fish is cooked.
  11. Bake the fish for 40 minutes.
  12. Put in a platter, garnish with tomatoe slices and spring onions.
  13. Serve with mayonaise or other desired sauce.
  14. Serve warm.
