Veggie Soup With Dumplings
- 1 cup chopped onion
- 1 cup diced carrot
- 3 sliced celery
- 3 cups vgetable broth or 3 cups chicken broth
- 4 diced potatoes
- 4 chopped tomatoes
- 2 garlic cloves
- 12 teaspoon salt
- 12 teaspoon pepper
- 14 teaspoon celery salt
- 14 cup flour
- 12 cup water
- 12 cup chopped cabbage
- 12 cup shredded spinach
- 1 cup frozen peas
- dumplings
- 1 cup shredded carrot
- 1 tablespoon parsley
- 1 cup cold water
- 1 cup shredded cheddar cheese (garnish)
- Cook onions, carrots, and celery for 6-8 minute.
- Stir in broth, potatoes, and tomatoes, garlic, salt and pepper.
- Simmer 20-30 minute.
- Mix flour and water until smooth.
- Add to soup, and cook until thickened.
- Stir in cabbage, spinach, and peas.
- Mix together dumplings adding water slowly until moist.
- Drop into soup by the tablespoon full.
- Cover and simmer 15 minute or until dumplings are done.
- Garnish with cheese.
