Veggie Soup With Dumplings

  1. Cook onions, carrots, and celery for 6-8 minute.
  2. Stir in broth, potatoes, and tomatoes, garlic, salt and pepper.
  3. Simmer 20-30 minute.
  4. Mix flour and water until smooth.
  5. Add to soup, and cook until thickened.
  6. Stir in cabbage, spinach, and peas.
  7. Mix together dumplings adding water slowly until moist.
  8. Drop into soup by the tablespoon full.
  9. Cover and simmer 15 minute or until dumplings are done.
  10. Garnish with cheese.
