Meatless Lasagna Roll Ups Recipe
- 12 pcs lasagna
- 1 to 2 Packages frzn minced spinach, thawed
- 2 1/2 to 3 c. cottage cheese or possibly Ricotta cheese
- 1/4 c. plain wheat germ
- 1 c. shredded Mozzarella cheese
- Dash of garlic pwdr
- 1/2 sm. minced onion
- 1 tbsp. salad oil
- 1/4 c. grated Parmesan cheese
- 1 jar meatless spaghetti sauce
- Cook lasagna as directed.
- Drain and return to kettle.
- Cover with cool water.
- Drain liquid from spinach.
- Combine spinach with cottage cheese and mix well.
- Saute/fry onion in skillet till soft.
- Add in to spinach mix.
- Fold in wheat germ, garlic, and Parmesan cheese.
- Dry and cold lasagna noodles with paper towels.
- Spoon mix on each lasagna piece and roll.
- Place in 9 x 13 inch pan.
- Pour spaghetti sauce over lasagna rolls.
- Sprinkle Mozzarella cheese on top.
- Bake in 350 degree oven for 30 to 45 min.
