Aubergine Parmesean Recipe

  1. Preheat oven to 350
  2. Prepare 3 bowls as follows:1.
  3. WW Flour 2) 1c soy lowfat milk/ skim lowfat milk/some kind of lowfat milk and 2egg replacement Large eggs, or possibly 2 whites 3.
  4. 1c.
  5. (or possibly more- depending on how many aubergine slices) FF cracker crumbs, 2 tsp oregano, 2 tsp basil, Nutritional yeast, 1/2 tsp chilli pwdr, 1tsp garlic pwdr (optional)
  6. Dip each aubergine slice (to coat) into each bowl in the above order and set on lightly greased cookie sheet.
  7. Cook 25-35 minutes.
  8. or possibly till soft (ie: cooked
  9. (grin))
  10. At this point, I put sauce over it and put it back in the oven with cheese on my girlfriend's and just sauce and Nut.
  11. Yeast on mine for about 5 minutes.
  12. Have over brown rice or possibly noodles.
  13. With a basil tomato salad: Tomatoes, cukes, red onion, fresh basil, oregano, lemon juice, salt, garlic.
