~Pupusas~
- 6 cup masa harina
- 3 cup water
- 1 pinch salt
- 1 tsp corn oil
- 1 packages queso fresco
- 2 cup refried beans
- 1 lb chicarones
- start by making your masa.
- you will add your oil, harina, water & salt to bowl & incorporate with your hand.
- your mixture will be dough like consistency, you can add more harina if your mixture is still to wet.
- crumble cheese into small pieces place into a small bowl.
- Chop your chicaron into small pieces ( I like to buy at mexican market).
- place into a small bowl.
- make sure your beans are nice and thick after you refry them and let cool completely add to bowl.
- I also use a small bowl with some cooking oil about 2 tablespoons to dip your fingers into makes working with masa easier.
- now heat a griddle while you start working your masa
- dip fingers into oil, start to roll small balls, you will need to make a small well in middle, one you have a good size you can add your cheese or beans, or chicaron or all 3 if you like.
- don't over fill.
- now roll masa over mixture and start to flatten out between your hands.
- place into dry griddle cook about 3-4 minutes each side.
- enjoy with a fresh cortido & crema drizzle.

- cortido"pickled cabbage mixture" just 1/2 cabbage finely chopped, 1/2 onion Finely cut, 2 cup apple cider vinegar, 2 cup water, 2 tspn oregano let wilt & chill overnite.
