~Pupusas~

  1. start by making your masa.
  2. you will add your oil, harina, water & salt to bowl & incorporate with your hand.
  3. your mixture will be dough like consistency, you can add more harina if your mixture is still to wet.
  4. crumble cheese into small pieces place into a small bowl.
  5. Chop your chicaron into small pieces ( I like to buy at mexican market).
  6. place into a small bowl.
  7. make sure your beans are nice and thick after you refry them and let cool completely add to bowl.
  8. I also use a small bowl with some cooking oil about 2 tablespoons to dip your fingers into makes working with masa easier.
  9. now heat a griddle while you start working your masa
  10. dip fingers into oil, start to roll small balls, you will need to make a small well in middle, one you have a good size you can add your cheese or beans, or chicaron or all 3 if you like.
  11. don't over fill.
  12. now roll masa over mixture and start to flatten out between your hands.
  13. place into dry griddle cook about 3-4 minutes each side.
  14. enjoy with a fresh cortido & crema drizzle.

  16. cortido"pickled cabbage mixture" just 1/2 cabbage finely chopped, 1/2 onion Finely cut, 2 cup apple cider vinegar, 2 cup water, 2 tspn oregano let wilt & chill overnite.
