Best Stuffed Mushrooms
- 24 whole Large Mushrooms
- 1 whole Small Yellow Onion
- 1/2 whole Red Pepper
- 1 clove Garlic
- 1 stick Butter
- 1/2 teaspoons Cayenne Pepper
- 1/2 teaspoons Basil
- 1 teaspoon Sage
- 3/4 cups Shredded Swiss Cheese
- 1/2 cups Feta Cheese
- 1/2 cups Mayonnaise
- Wash mushrooms in cold water.
- Pop out stems.
- Finely chop stems, onion, red pepper, and garlic.
- Melt butter over medium high heat and sautee all chopped ingredients until soft, about 5-7 minutes.
- Transfer to a mixing bowl, mix in cayenne, basil, and sage.
- Add cheeses and mayonnaise and gently but thoroughly mix.
- Using a spoon stuff each mushroom cap with filling.
- Bake at 350F for 10 minutes.
- (Add more or less cayenne pepper to suit.)
