No-Cook No-Sugar Light Peach Spread
- 2 cups prepared peaches (buy about 1 lb./500 g fully ripe peaches)
- 1 Tbsp. lemon juice
- 23 pkt. Sweet'N Low Low Calorie Sweetener
- 1 box Certo Light Pectin Crystals
- Rinse clean plastic containers and lids with boiling water.
- Dry thoroughly.
- Peel and pit peaches.
- Place fruit in food processor; cover.
- Process until finely chopped, using pulsing action.
- Measure exactly 2 cups prepared fruit into large bowl.
- Stir in lemon juice, low calorie sweetener and pectin crystals.
- Let stand 30 min., stirring occasionally.
- Fill all containers immediately to within 1/2 inch of tops.
- Wipe off top edges of containers; immediately cover with lids.
- Store in refrigerator up to 1 week or freeze extra containers up to 1 year.
- Thaw in refrigerator before using.
