No-Cook No-Sugar Light Peach Spread

  1. Rinse clean plastic containers and lids with boiling water.
  2. Dry thoroughly.
  3. Peel and pit peaches.
  4. Place fruit in food processor; cover.
  5. Process until finely chopped, using pulsing action.
  6. Measure exactly 2 cups prepared fruit into large bowl.
  7. Stir in lemon juice, low calorie sweetener and pectin crystals.
  8. Let stand 30 min., stirring occasionally.
  9. Fill all containers immediately to within 1/2 inch of tops.
  10. Wipe off top edges of containers; immediately cover with lids.
  11. Store in refrigerator up to 1 week or freeze extra containers up to 1 year.
  12. Thaw in refrigerator before using.
