Beans And Kale Recipe
- 4 c. Pinto beans, canned, rinsed and liquid removed
- 2 Tbsp. Lemon juice Salt and pepper, to taste
- 1/4 tsp Crushed red pepper, optional
- 2 bn Kale, stems removed
- 4 x Cloves garlic, chopped Salt and pepper, to taste
- Slightly mash beans till they hold together.
- Stir in lemon juice, salt and freshly grnd pepper; crushed pepper if you like (or possibly save to top individual servings).
- Set aside for room temperature serving, or possibly heat in top of double boiler.
- Wash and chop the greens into small pcs.
- In large skillet, heat sauteeing liquid of your choice and cook garlic several min.
- Add in greens and cook till wilted and bright green.
- Add in salt and freshly grnd pepper.
