Referee Cookies

  1. Preheat oven to 375F (190C) F (190 degrees C).
  2. Place sheets of foil on countertop for cooling cookies.
  3. For cookies, combine brown sugar, shortening, water.
  4. Beat at medium speed of electric mixer until well blended.
  5. Beat eggs into creamed mixture.
  6. Combine flour, cocoa, baking soda and salt.
  7. Mix into creamed mixture at low speed just until blended.
  8. Stir in chocolate chips.
  9. Drop rounded tablespoonfuls (15 mL) of dough 2 inches (5 cm) apart.
  10. Bake on baking sheet at 375F (190C) F (190 degrees C) for 7 to 9 minutes.
  11. DO NOT OVERBAKE.
  12. Cool 2 minutes on baking sheet.
  13. Remove cookies from pans onto foil to cool completely.
  14. For icing, place white chocolate chips and shortening in heavy seal.
  15. Microwave on medium.
  16. Knead bag after 1 minute.
  17. Repeat until smooth (or melt by placing bag in bowl of hot water).
  18. Cut tiny tip off corner of bag.
  19. Pipe thin stripes on cookies.
