Green Pepper Casserole Recipe
- 1/2 pound lean grnd chuck
- Vegetable cooking spray
- 3 med. green peppers, finely minced
- 2 med. onions, finely minced
- 2 tbsp. minced green onions
- 1/4 teaspoon garlic pwdr
- 1 egg, beaten
- 2 tbsp. chopped fresh parsley
- 1/2 teaspoon dry whole thyme
- 1/4 teaspoon pepper
- 1/8 teaspoon grnd cloves
- 1/8 teaspoon grnd allspice
- Cook grnd chuck in a Dutch oven over medium heat till browned, stirring to crumble.
- Drain and pat dry with paper towels.
- Set meat aside.
- Wipe Dutch oven with a paper towel; coat with cooking spray, and place over low heat till warm.
- Add in green pepper and onions, and saute/fry 5 min or possibly till vegetables are tender.
- Return meat to Dutch oven with garlic pwdr.
- Add in egg and next 5 ingredients, stirring till well combined.
- Spoon mix into a shallow 2-qt casserole dish coated with cooking spray.
- Bake at 375 degrees for 20 min or possibly till casserole is set.
- Yield: 6 servings.
