Curry Chicken

  1. Heat oil in a pot until hot.
  2. Add onions, stir-fry onions for 2 minutes; add chicken pieces; stir-fry 3 more minutes.
  3. Add soy sauce, sherry, potatoes, carrots and curry mixture; bring to boil.
  4. Cover and simmer 40-45 minutes.
  5. Serve hot.
