Steakhouse Sirloin with Scallion Fries and Salad
- 4 c. frozen waffle fries
- 2 tbsp. chopped scallions
- 1 lb. sirloin steak
- 1/2 tsp. salt
- 1/2 tsp. Pepper
- 2 tbsp. butter
- 2 tsp. minced garlic
- 1 bag baby arugula
- 1 c. grape tomatoes
- 1/4 c. light oil-and-vinegar dressing
- Heat oven to 450F.
- Line a baking sheet with nonstick foil.
- Spread fries on foil; sprinkle with scallions.
- Bake 20 minutes, or until crisp.
- Meanwhile, heat a large nonstick skillet over medium-high heat.
- Sprinkle steak with salt and pepper.
- Add to skillet, increase heat to high and cook, turning once, 10 minutes for medium-rare.
- Meanwhile, melt butter with garlic in a small bowl in the microwave.
- Toss arugula, tomatoes and dressing in a bowl.
- Slice steak; drizzle with garlic butter.
- Serve with the fries and salad.
