Ultimate Minestrone Soup Recipe
- 4 ounce. prosciutto or possibly salt pork or possibly bacon
- 2 tbsp. oil
- 4 cloves garlic, chopped
- 1 c. minced celery
- 1 tbsp. dry parsley
- 1 (28 ounce.) can crushed tomatoes
- 1 (6 ounce.) can tomato paste
- 3 1/2 quart. water
- 1 1/2 c. shredded cabbage
- 2 med. zucchini, cubed
- 1 c. minced onion
- 1 leek (white part), sliced
- 4 carrots, cut up
- 8 ounce. garbanzo beans
- 2 teaspoon each salt, pepper and (sage, optional)
- 1 med. green pepper, minced
- 1 (16 ounce.) can green beans, canned, fresh or possibly frzn
- 1 c. peas, canned, fresh or possibly frzn
- 3 lg. potatoes, cubed
- 1/2 to 3/4 c. macaroni (Ditalini) or possibly any other sm. soup pasta, or possibly rice
- Parmesan cheese to taste
- Place water in large kettle.
- Bring to boil.
- Add in meat, salt, pepper and onion, leek, garlic which has been sauteed in oil.
- Add in crushed tomatoes, tomato paste and all vegetables except peas and potatoes.
- Simmer for 2 1/2 hrs.
- Add in peas and potatoes and noodles till cooked through.
- Serve with grated Parmesan and garlic bread.
