15 Minute Black Bean Salad
- 15 ounces black beans drained and rinsed
- 1 cup corn frozen, thawed
- 8 each cherry tomatoes quartered
- 1/2 cup onions minced
- 2 medium garlic cloves pressed
- 1/2 cup sweet red bell peppers diced
- 2 tablespoons pepitas (pumpkin seeds) coarsely chopped
- 1/4 cup cilantro chopped fresh
- 2 tablespoons olive oil, extra-virgin
- 3 tablespoons lemon juice fresh
- 1 x salt and black pepper to taste
- Mince garlic and press onions and let sit for at least 5 minutes to bring out their health-promoting benefits.
- Mix all ingredients together and serve.
- This salad will keep for a couple of days and gets more flavorful if you let it marinate in the refrigerator for at least half an hour or overnight.
