Deep-Dish Pear Raisin Pie for One
- 1 pear, cored, peeled and sliced thin
- 1 tablespoon raisins
- 1 tablespoon brown sugar (packed)
- 12 teaspoon flour
- 18 teaspoon cinnamon
- 12 teaspoon lemon juice
- In bowl mix well pear, raisins, sugar, flour, cinnamon and lemon juice.
- Turn into greased 10-ounce baking cup.
- Cover with pastry circle or sprinkle on preferred topping.
- Bake in preheated 375 degrees F oven 30 to 35 minutes or until crust is golden.
- Serve warm or cool with whipped cream or ice cream.
- PASTRY:.
- Cut 1 tablespoon shortening into 3 tablespoons flour and dash of salt.
- With fork stir in 1 teaspoon cold water.
- Gather in ball.
- Roll out floured surface to 5 1/2- inch circle.
- Place over fruit in baking cup; crimp edges and cut slits in crust.
- GRANOLA TOPPING:.
- Mix well 2 tablespoons granola and 1 1/2 teaspoons softened butter or margarine.
- CEREAL TOPPING:.
- Mix well 2 tablespoons crushed cereal flakes, 1 1/2 teaspoons sugar and 1 1/2 teaspoons butter or margarine.
