Sig's Lentil Salad with Pasta
- 100 grams pasta of choice, I used green pasta for colour
- 1 pinch Salt for boiling pasta
- 75 grams Ready to eat puy lentils or use canned variety but rinse well. Alternately soak dried lentils and boil as per direction until soft
- 75 grams frozen peas, defrosted
- 2 small handful of mixed salad , (rocket (rucola), spinach, chard ) chopped
- 4 small spring onions , chopped
- 2 medium mushroom chopped
- 1 lime
- 75 grams mayonnaise or salad cream
- 1 pinch cayenne pepper
- 1 pinch sugar
- First boil your pasta as per instruction adding a pinch of salt and to your liking .When cooked rinse under cold water
- Mix the lentils ,peas , spring onion, mushrooms and mayonnaise
- Add the lime juice ,pepper and sugar
- Then add the chopped lettuce /salad leaves , mix gently .
- Add the cooled pasta into the lentil salad and serve with lemon wedges
