Herbed Rice Pilaf
- 1 12 tablespoons butter
- 12 cup chopped scallion
- 14 cup chopped parsley (dill, and or or basil)
- 2 cups quick-cooking rice
- 2 cups vegetable broth or 2 cups chicken broth
- 14 teaspoon pepper
- In a medium saucepan, melt butter.
- Add scallions and herbs and cook, stirring, for 1 minutes.
- Add rice, stir to coat grains and then add broth.
- Bring to a boil over high heat, cover, remove from heat and let stand until liquid is absorbed and rice is tender, 5 minutes.
- Season with salt and pepper to taste.
- Fluff with a fork before serving.
