Catfish Fillets With Herbed Vegetables

  1. Heat gas grill on medium or charcoal grill until coals are ash white.
  2. Rinse catfish fillets with cold water; do not pat dry.
  3. Sprinkle 1 teaspoon seasoning over fish; set aside.
  4. Heat vegetable broth in 2-quart saucepan.
  5. Stir in all remaining ingredients.
  6. Cook over medium-high heat, stirring occasionally, 3-4 minutes or until liquid is absorbed.
  7. Keep warm.
  8. Place fish onto grill; close lid.
  9. Grill, turning once, 6-8 minutes or until fish flakes with fork.
  10. Place fish onto platter.
  11. Spoon warm vegetable mixture over fish.
