Fresh Mango Salad
- 3 cups mangoes, chopped
- 2 tomatoes, chopped
- 12 red onion, chopped
- 2 cucumbers, chopped (seed if you want)
- 1 12 cups corn, fresh best
- 12 cup basil, fresh shredded
- 12 cup olive oil
- 14 cup rice vinegar
- 2 tablespoons lime juice
- 1 teaspoon garlic, chopped
- 12 teaspoon salt
- 12 teaspoon pepper
- 1 bunch watercress, torn
- 1 head bibb lettuce, torn
- Combine all but watercress and lettuce in a large bowl, tossing to coat all.
- Cover and chill 2 hours.
- Serve over watercress and lettuce.
