Start Over a low fire

  1. With a small wood fire in grill, put the eye of round over it fat side up close lid.
  2. Cook 30 minutes.
  3. Add salt, garlic, and paprika.
  4. Set in to a zip lock bag or glass dish covered.
  5. Put into refrigerator overnight.
  6. next day preheat oven 400 Fahrenheit.
  7. Wrap the eye of round in banana leaf and tie with butchers twine set into a small roaster, or oven safe dish.
  8. Add water.
  9. Quarter the onions, and add.
  10. Then add garlic, salt, pink pepper berries.
  11. Slice the bell peppers and add.
  12. Cook covered 30- 40 minutes.
  13. Remove from oven.
  14. Put on stove top.
  15. Turn on heat add add wine and cauliflower cook reducing the liquid a bit.
  16. When the cauliflower is tender and eye of round is at 158 Fahrenheit its done remove eye of round to a platter to rest.
  17. After 15 minutes cut twine don't remove leaf or husk slice it with it on add juices over top of meat enjoy!
