Pineapple Drop Cookies Recipe
- 3/4 c. shortening
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1 c. brown sugar, firmly packed
- 1 egg, well beaten
- 2 1/2 teaspoon baking pwdr
- 1 c. crushed pineapple, undrained
- 2 c. flour
- 1 c. rolled oats
- 1 c. minced nuts
- Combine shortening, salt and vanilla using high speed of electric mixer.
- Add in sugar gradually and cream well.
- Reset mixer to low speed.
- Add in egg and mix well, then the flour and baking pwdr that has been sifted together, alternately with the pineapple.
- Mix well after each addition.
- Add in rolled oats and nuts slowly, mixing them in well.
- Drop from a Tbsp.
- onto a greased baking sheet.
- Bake at 350 degrees for 15- 18 min.
