Grilled Red Potatoes
- 6 to 8 red potatoes,
- the equal amount of sm. red potatoes
- 1 med onion, cut in half and in thin slices
- 1 tbsp. oil
- 2 tbsp. butter
- margarine
- 2 cloves garlic, minced
- 1/2 tsp. basil
- Boil potatoes till tender.
- After boiling potatoes chill them in iced water for a few minutes.
- In a bowl, mix all ingredients together except butter.
- Lay out some foil shaped as a rectangle with sides up about 1/2 inch (I use tupperware as a mold), wipe the foil with oil to prevent sticking and layer some of the mix down and top with parts of butter.
- Lay down a second layer and top with parts of butter.
- Finish with a third later and butter.
- Wrap tightly with foil.
- Cook on grill over medium heat for about 12-15 minutes each side.
