Chickpea & Cranberry Couscous

  1. Prepare couscous and let cool.
  2. In a seperate bowl, combine couscous, cranberries, walnuts and scallions.
  3. Sprinkle with salt.
  4. Add couscous once it's cooled.
  5. While couscous is cooling, combine olive oil, soy sauce, agave nectar, curry powder and salt.
  6. Pour this dressing over couscous.
