Savory Crockpot Pot Roast
- 3 pound beef chuck roast boneless
- 1 tablespoon olive oil
- 8 small potatoes cut in half
- 3 cups baby carrots
- 1 each onions chopped
- 3 cloves garlic minced
- 5 ounces horseradish prepared
- 1/2 teaspoons salt
- 1/4 teaspoons black pepper
- 1 cup water
- Heat oil in a large skillet and brown the roast about 10 minutes, turning occasionally, until browned on all sides.
- Place vegetables in your slow cooker.
- Place beef on top of vegetables.
- Mix together horseradish, salt and pepper in a small bowl and spread over the beef.
- Pour water over all contents.
- Cover slow cooker and cook at LOW setting for 8 to 10 hours until everything is fall-apart tender.
