Vermont Spinach Pear Salad
- 2 bunches spinach, washed
- 4 red d'anjou pears, sliced in 1/6ths
- 3/4 red onion, sliced
- 6 oz. crumbled goat cheese
- 1/2 recipe Maple Syrup Pecans
- 1/4 recipe Maple Syrup Vinaigrette
- Fresh cracked black pepper, to taste
- Place spinach on plate.
- Place red onion sparingly over salad.
- Place 4 pear slices on each salad.
- Sprinkle goat cheese and pecans on top.
- Garnish with black pepper.
- Top with vinaigrette, to taste.
