Un-Stuffed (Deconstructed) Cabbage Rolls
- 1 pound Ground Beef
- 1 Tablespoon Olive Or Canola Oil
- 1 whole Onion, Peeled And Diced
- 4 cloves Garlic, Peeled And Minced
- 5 ounces, weight Tomato Paste
- 1- 1/2 cup Chicken Stock
- 3 cups Chopped Green Cabbage
- Salt And Pepper, to taste
- In a large saute pan, brown ground beef.
- Season to taste and set aside.
- In a large pot, add oil and saute onion until soft and translucent.
- Stir in garlic for a few seconds then stir in tomato paste.
- Whisk in chicken stock and add chopped cabbage.
- Bring to a boil, cover and lower the heat to medium low.
- Cook for 45 minutes.
- Stir in cooked beef, cover and continue to cook an additional 15 minutes.
- Season with salt and pepper.
- If youd like a thicker sauce, make a slurry by whisking together 1 tablespoon of flour and a bit of water and stirring it into the tomato sauce.
- Serve over rice for a traditional cabbage roll flavor, or even potatoes or noodles.
