Scrambed Eggs with Colourful Vegetables and Tuna

  1. Take off the blossom ends from the cherry tomatoes and cut in half.
  2. Remove the stem end and string from the snap peas and cut in half.
  3. Beat the egg lightly and mix in the vegetables, tuna can (with the brine), sweet corn (drained), grated cheese, salt and pepper.
  4. Melt the butter in a heated frying pan and pour in the contents of the bowl.
  5. Stir in from the edge of the pan.
  6. Once it is cooked to your liking, stop the heat.
  7. Transfer to a serving dish.
  8. Add garnishes such as lettuce (not included in the recipe) to your liking.
