Scrambed Eggs with Colourful Vegetables and Tuna
- 2 Egg
- 12 Cherry tomatoes
- 5 to 6 Snap peas
- 1 can of tuna Canned tuna and canned sweet corn
- 1 tbsp Grated cheese
- 1 Salt and pepper
- 1 Butter (or margarine)
- Take off the blossom ends from the cherry tomatoes and cut in half.
- Remove the stem end and string from the snap peas and cut in half.
- Beat the egg lightly and mix in the vegetables, tuna can (with the brine), sweet corn (drained), grated cheese, salt and pepper.
- Melt the butter in a heated frying pan and pour in the contents of the bowl.
- Stir in from the edge of the pan.
- Once it is cooked to your liking, stop the heat.
- Transfer to a serving dish.
- Add garnishes such as lettuce (not included in the recipe) to your liking.
