Fiona's mincemeat cake

  1. Grease a 7inch round cake tin
  2. Cream butter and sugar together (ie beat together until it looks light)
  3. Beat in eggs to the sugar and butter mix.
  4. Beat in one at a time until combined
  5. Stir in the mincemeat and fold in the flour.
  6. The mixture should be moist and not too stiff add a little milk if necessary
  7. Bake at 325F for 10 minutes then lower to 300F for 30-40 minutes the cake is ready when it shrinks from the sides of the pan
  8. Make a coffee sit with your feet up and enjoy a slice :-)
