Cranberry Chipotle Beef
- 1 whole Medium Onion, Sliced
- 1- 1/2 pound Beef Chuck Roast
- 1/4 teaspoons Salt
- 1/4 teaspoons Ground Black Pepper
- 2 cloves Garlic, Minced
- 1 can (16 Oz. Size) Whole Cranberry Sauce
- 2 teaspoons Chipotle Peppers In Adobo Sauce, Finely Chopped
- 2 cups Cooked Brown Rice
- 1 whole Jalapeno Pepper, Halved For Garnish
- Place onion in a slow cooker.
- Add beef to the cooker.
- Season with salt, pepper and garlic.
- Combine cranberry sauce and chipotle peppers.
- Pour over all.
- Cover and cook over low heat for 6 to 8 hours, or on high heat for 3 to 4 hours.
- Serve with cooked rice and garnish with jalapeno peppers.
