Curried Pork Empanadas

  1. Heat oven to 425 degrees F.
  2. Heat oil in large skillet on medium-high heat.
  3. Add onions and garlic; cook and stir 2 min.
  4. Add meat, raisins, sugar and seasonings; stir.
  5. Cook 3 min., stirring occasionally.
  6. Unroll 1 pie crust on lightly floured surface.
  7. Use rolling pin to roll crust into 12-inch circle; cut into 8 rounds with 3-inch biscuit cutter, rerolling scraps as necessary.
  8. Repeat with remaining crusts.
  9. Spoon 1 Tbsp.
  10. meat mixture onto center of each round; brush edge with egg.
  11. Fold dough rounds in half; seal edges with fork.
  12. Place, standing upright, on parchment-covered baking sheets; brush sides of empanadas with remaining egg.
  13. Bake 10 to 12 min.
  14. or until golden brown.
