Pistachio Cinnamon Chicken Salad

  1. Cook chicken breasts your favorite way, usually I poach mine.
  2. Shred cooked chicken breast using a fork; place in a large mixing bowl.
  3. Add remaining ingredients; gently toss to combine.
  4. Transfer to serving bowls.
  5. Serve chilled or at room temperature.
  6. Sprinkle with additional scallions.
