Pistachio Cinnamon Chicken Salad
- 16 ounces boneless skinless chicken breasts
- 1 12 cups plain fat-free Greek yogurt
- 12 cup pistachios, finely chopped
- 1 teaspoon ground cinnamon
- 1 teaspoon fresh lime juice
- 4 fresh basil leaves, finely chopped
- 1 stalk celery, finely chopped
- 14 teaspoon sea salt
- 14 teaspoon fresh ground pepper
- 2 scallions, finely chopped
- Cook chicken breasts your favorite way, usually I poach mine.
- Shred cooked chicken breast using a fork; place in a large mixing bowl.
- Add remaining ingredients; gently toss to combine.
- Transfer to serving bowls.
- Serve chilled or at room temperature.
- Sprinkle with additional scallions.
