Cornmeal Breakfast Waffles
- 4 large eggs
- 4 cup milk
- 2 tsp sugar
- 2 1/2 cup cornmeal
- 2 tbsp baking powder
- 3 1/2 cup all purpose flour
- 6 tbsp vegetable oil
- 1 tsp vanilla extract (I use extra)
- Mix dry ingredients together in a large bowl.
- Add the oil, eggs, and milk.
- Mix well.
- Pour the batter into a hot Belgian or regular waffle iron.
- Cook according to the instructions on your waffle maker.
- Set each one on a baking rack in the oven on low to keep them slightly crispy.
- Serve with maple or other flavored syrup.
