Simple Herbed Potatoes

  1. chop fine the sage leaves, I prefer slivers for effect.
  2. powder the rosemary in pestle.
  3. medium grind the peppercorns.
  4. mix dry ingredients and set aside in ramakin.
  5. set aside juice and zest in ramakin.
  6. steam potatoes, do not boil as it weakens the skins, untill tender.
  7. heat medium skillet med.
  8. high.
  9. let the oil come up to temperature and toss potatoes in.
  10. add dry mixture and saute for about 1 minute.
  11. add lemon zest mixture; toss briefly and remove from heat.
  12. works well served family style set off with sage or mint sprigs or simply arrange 2-4 potatoes individually per serving plate.
  13. thought I'd add a recipe to start with that I could remember at work.
  14. this one is quite easy, and fast, but gets consistent remarks.
